The restaurant draws inspiration from Southern French Provençal cuisine, emphasizing the natural flavors of seasonal ingredients and vegetables. The cooking style is not as heavy as some traditional French dishes, but instead presents a lighter and more refined modern French cuisine through seasonal vegetables, fish, meats, and delicate sauces.

In terms of actual dining experience, I believe the biggest charm of Hibiya Palace lies not only in the exquisite and delicious dishes but also in the rare natural ambiance that is quite appealing.
Tokyo has many beautiful restaurants, but there are not many located in parks where you can directly enjoy the greenery. Sitting indoors, the large windows allow sunlight and outdoor scenery to naturally extend in, giving a feeling of temporarily escaping the rhythm of the city even when you are in the heart of Tokyo.

Secondly, there is the sense of ritual created by the restaurant, which is very suitable for special travel itineraries, such as:

This time my dining schedule is arranged for lunch. After arriving at Hibiya Park, the process of slowly walking from the entrance to the restaurant is actually part of the experience of this restaurant. Unlike restaurants commonly found in downtown Tokyo, which require crossing busy streets or entering commercial buildings, Hibiya Palace it gives a sense of "arriving at a special place" from the very beginning.

The large glass windows keep the interior bright, and the view outside changes with the seasons. In spring, there is new greenery; in summer, there is dense shade from trees; and in autumn and winter, there are different layers of plant colors.
Lunch is especially recommended because natural light makes the entire space more comfortable and is also very suitable for taking photos to document your travels. The dishes are mainly based on seasonal ingredients, and each dish reflects the chef's delicate handling of ingredient combinations.

First to appear is Amuse (appetizer). The small dish, paired with delicate plating, showcases from the very beginning the emphasis on ingredients and visual presentation. In terms of flavor, it can be considered a very healthy and not overly strong-tasting exquisite snack.

Next is the seasonal limited corn chowder. In French cuisine, Velouté is a type of smooth and creamy soup. This corn soup is very delicate, allowing you to taste the natural sweetness of the corn itself, complemented by the aromatic garnish on top, resulting in a mild yet layered flavor.

The appetizer is a French crepe made with buckwheat flour, paired with a seasonal vegetable salad, incorporating elements of traditional French cuisine with seasonal Japanese vegetables. The crispy texture, combined with fresh vegetables and sauce, makes it very refreshing and aligns well with the direction of Hibiya Palace towards natural and healthy cuisine.

The next warm appetizer is a dish that left a deep impression on me this time. The vibrant red color presented by the beetroot makes the entire risotto not only a taste experience but also a visual focal point on the dining table.

The main dish I chose is salmon from Sado Island in Niigata, cooked in the French poêlé style. The outer layer is slightly charred, while the fish itself remains tender, and when paired with sweet peppers and a shellfish sauce, it enhances the umami layers of the seafood dish.

Additionally, if you enjoy drinking alcohol or beverages, there are many drinks available for individual order here. This time, I specifically ordered orange juice from Ehime Prefecture and the famous Hibiki whiskey, which pairs perfectly with French cuisine!

Take the Tokyo Metro Marunouchi Line, Hibiya Line, or Chiyoda Line, and get off at Kasumigaseki Station. After exiting from B1a, it takes about 2 minutes on foot to reach. If you are coming from Hibiya Station, it takes about 3 minutes on foot.
