Mr. Takahashi's bird's eye view of Japan helped him truly feel the depth of Japanese cuisine.
Mr. Takahashi was born in 1986 in Saitama. He studied abroad in Canada in his teens, and became aware all over again of the depth of Japanese food by experiencing Japan's food culture in another country. This led him to want to become a chef. After coming back to Japan, he trained for three years at a famous Japanese restaurant in Osaka, and then began his career in sushi. He trained as a sushi artisan in famous restaurants such as Matsue in Ebisu and Sushi Rinda in Meguro. Currently he works as the head chef at Azabudai Yuuri. Based on the theme of providing delicious sushi in a homely atmosphere, he works hard every day to create a restaurant that lets guests become more familiar with sushi.
