Mr. Maeda was born in 1982 in Hokkaido, and is driven by a pure passion for ramen. He says that there is no true end to ramen making, and it never gets boring because you can always pursue new methods - and thus works hard at making flavors every day. Having trained hard at many famous restaurants such as otaru kuraya, Yamaarashi, Otaru Appare, and IPPUDO, he's cultivated a steady skill and sense. Based on his experience, he continues to give form to ideas without being bound by conventional thinking. His refusal to become complacent regarding his own skills and his attitude of learning through trial and error supports the unique character of Hien.
