The restaurant carefully selects only extra-large blue eel which is 30% larger than typical eel. As these eels make up only about 20% of the total distribution, they are a rare ingredient with exceptional thickness, fat, and delicious flavors. Fresh eels are carefully prepared and grilled over charcoal. The intense heat cooks the eel thoroughly down to the bones, creating a fragrant, crispy exterior while keeping the inside soft.
