Mr. Morimoto was born in Hiroshima Prefecture in 1980. He grew up near the ocean and has been familiar with seafood since childhood. With nearly 20 years of experience at Japanese restaurants and seafood izakayas, he has mastered a wide range of dishes, from sashimi and grilled items to hot pot dishes and appetizers that pair well with sake. He is particularly captivated by the depth of oysters, whose flavors vary by region and season, and places great importance on the unique characteristics of each producing region and their pairing with sake. He pursues a diverse range of preparations, from raw oysters to cooked dishes, and is committed to delivering the natural flavor of oysters in their most delicious form.
