Mr. Nakaya serves masterpieces that fully express the charm of Ehime cuisine.
Mr. Nakaya was born in Ehime Prefecture in 1964, he began his career as a chef in his teens. He spent seven years honing his skills as an apprentice at a Japanese restaurant. He then went on to work as a sushi and Japanese cuisine chef at restaurants in Matsuyama City. In 1990, he joined the current Sushimaru Co., Ltd. He currently serves as the manager and head chef at the Sushi Maru Dogo Branch. Every day, he offers a menu that fully conveys the charm of Ehime's local food culture and the unique ingredients the region has to offer.
