In the historically rich Higashi Chaya District, guests can enjoy authentic Japanese cuisine where tradition and skill are expertly intertwined.

Shinnei is nestled in Kanazawa's historic Higashi Chaya District. Renovated from a townhouse built over 100 years ago, it has been designated as a traditional preserved building in Kanazawa City. The chef, who honed his skills at acclaimed restaurants in Kansai and earned a Michelin star, prepares exquisite Japanese cuisine. His philosophy is rooted in the spirit of chakaiseki (tea ceremony cuisine), delicately bringing out the seasonal flavors of the Hokuriku region. The "sashimi" made from fresh fish, delivered directly from Noto and aged for a brief period, is an exquisite dish that showcases umami and boasts a beautiful presentation. The carefully selected tableware further elevates the culinary experience. The restaurant features six counter seats and one table for four. Reservations are necessary since only one group is accepted per day for each seating. In this serene space, decorated with hanging scrolls and folding screens, the essence of harmony, respect, purity, and tranquility permeates every dish, setting, and act of hospitality.
