The long-established kappo (multi-course Japanese cuisine) restaurant Shihogama has been reborn in Kanazawa as a sushi restaurant after some time. The second-generation chef, Mr. Koda, skillfully captures local seasonal flavors and transforms his carefully selected fresh fish into an exquisite dish. Ingredients are sourced fresh every morning from Ueshima Shoten and elevated into dishes that reflect the changing seasons. Besides sushi, the specialty cuisine features the local delicacy "Jibuni," which embodies the warmth of Kanazawa with its aromatic broth. The restaurant is particularly concerned with sake produced in Ishikawa Prefecture, so you can fully enjoy the delicious taste that resonates with the cuisine. Counter and fully private rooms are available. The counter seating allows you to observe the chefs' techniques closely and listen to Mr. Koda's fascinating stories about Kanazawa.
