From the chef
With extensive experience in Japanese cuisine and sushi techniques, Mr. Sawada presents dishes with meticulous handiwork.

He was born in 1987 in Shiga. From a young age, he became familiar with sushi at his family's sushi restaurant and aspired to become a chef. After graduating from Tsuji Culinary Institute, he trained for 11 years at a Kyoto-style kaiseki (tea-ceremony dishes) restaurant in Osaka, learning the techniques and spirit of Japanese cuisine. He then further expanded his culinary range through seven years of experience at his family's sushi restaurant. Through a friend's introduction, he was appointed head chef of Sushi Tsukino-ne Shinsaibashi from its opening in May 2025.
