Mr. Shimizu was born in 1971 in Gunma. Born to parents who ran a Chinese restaurant, he developed an interest in the culinary world from an early age, but initially pursued a different career path. In 2005, he began working in the food industry in earnest, gaining experience in various establishments, including teppanyaki restaurants. In August 2025, he became the manager of Teppanyaki Hachi Hachi upon its opening. He continuously finds ways to make teppanyaki, often perceived as high-end, more accessible and enjoyable in a relaxed and casual setting.
