Mr. Ito was born in Miyagi Prefecture in 1984, he dreaming of opening a ramen shop. He enrolled in the culinary department at Meisei High School. While studying cooking, he discovered the appeal of Japanese cuisine and became determined to master it. After graduating, he trained for 5 years at traditional Japanese restaurant. Afterwards, he wanted to study a different culinary genre, so he started working at a yakiniku restaurant. He honed his skills and served as manager for 4 years. There, he met Mr. Kato, the current owner, and he started working at the affiliated chicken restaurant Torizen Tori Fuji in 2015. He became head chef at USHIFUJI in December 2019, a position he holds to this day.
