Experience and trust shape flavor: Mr. Negishi's authentic Japanese cuisine has its roots in Funabashi.

He was born in 1969 in Tokyo. Started his career as a chef at the age of 20, gaining experience in menu development, executive chef, and new restaurant launches at several Japanese restaurants. He is a highly skilled professional with extensive knowledge in both the kitchen and management. In 2022, he was appointed as the head chef and owner of Funabashi Okimoto, introduced by an acquaintance who owns a fish shop. With delicate Japanese techniques that highlight seasonality and freshness, he captivates local gourmets.
