Mr. Kato was born in Niigata Prefecture in 1978. Aiming to become a chef since his teens, he deepened his industry experience managing restaurants in Okinawa and Fukuoka. Seeking a new environment, he moved to Kyoto. The allure of eel cuisine combined with his mastery of Japanese culinary techniques led him to specialize in eel dishes. Later, invited by the head branch of Unawa, he was allowed to open a branch restaurant. He now showcases his skills at Kyoto Unawa Main Branch Jingumichi.
